This is a Hobart 305GTP dry steam quick cooker from the premium manufacturer Hobart, built in 2018.

The medium-sized 305 GTP dry steam quick cooker is commonly used in community catering. With its three 1/1 GN shelves, it can freshly cook up to 650 portions per hour with precise timing.

Water evaporation and the resulting increase in volume create an atmosphere of saturated steam in the cooking chamber, ensuring superior heat transfer to the food. Compared to hot air or combi-steam, saturated steam offers significant advantages in terms of transferable heat flow density. Shorter cooking times mean less nutrient loss and healthier meals.

The unit has been tested in our in-house specialist workshop and is fully operational.
