2-vessel brewhouse mounted as a brew block on a stainless steel frame. The system consists of the following components:
- Mash/lauter tun made of stainless steel for mashing in, mashing and separation of the mash. Separate control of the thermal oil-heated side wall and bottom heating. The double-walled vessel is insulated and has a polished interior surface. The top-mounted motor drives the cutting and mixing mechanism with continuously adjustable speed. For lautering, there is a multi-part perforated false bottom and for spent grain removal, a rectangular manway on the side. Furthermore, the tank is equipped with a hinged lid, CIP spray head, temperature sensor, and spraying unit.
- Wort kettle/whirlpool made of stainless steel. The vessel is double-walled and fitted with welded heating zones in the shell and bottom, which are heated by thermal oil. The vessel is insulated and equipped with a temperature sensor, hinged lid, CIP cleaning head, spray unit, height-adjustable lock, and tangential wort inlet for cast-out. The inner surface is polished.
- Single-stage plate heat exchanger for cooling wort from 100°C to 18°C, while simultaneously heating water from 13°C to 77°C. The wort from one brew can be cooled in about one hour. The plates are made of stainless steel 1.4401 (AISI 316) and the seals are EPDM. The wort cooler features a PT1000 temperature sensor.
- Thermal oil heater for heating the laser-welded heating zones of the brewhouse vessels. About 50–65 l of oil is electrically heated up to a maximum of 150°C in the thermal oil tank. A safety switch automatically stops the heating if 160°C is exceeded. The vessel is equipped with temperature and level sensors. A pump circulates the thermal oil.
- 12 hl hot water tank, standing separately on three feet, with manway at the top. The tank is heatable, insulated, and equipped with a hose level indicator, temperature sensor, and hot water pump.
- Centrifugal pump for product transfer between tanks and for CIP cleaning, with a motor output of 0.37 kW and continuously adjustable speed.
- Stainless steel piping and manual valves for routing product flows. The pipes are orbitally welded and have polished internal surfaces.
- Control unit with 10" touchscreen and PLC for brewhouse automation, housed in a stainless steel control cabinet. The following processes can be controlled and monitored:
1. On/Off and speed control of the mixer and cutting unit
2. Temperature control of mash/lauter tun
3. Temperature control for kettle/whirlpool (separate for bottom and side wall)
4. On/Off and speed control of product and CIP pumps
5. Display of inlet water temperature
6. Display of wort temperature at outlet
7. Temperature control of thermal oil tank
8. Timer settings
9. Setting of mash program (multi-step mashing with up to 5 steps; setting times, temperatures, stirrer and pump speeds)
10. Hot water tank temperature
